Ingredients
- Lemon - ½ piece
- Cauliflower - 23.8 oz
- Milk - 17 fl oz
- Butter - 1.4 oz
- Safflower Oil - 5 tablespoons
- Wheat Flour - 3 tablespoons
- Nutmeg - a pinch
- Gruyère cheese - 3.5 oz
- Chocolate eggs - 4 pieces
- Tomatoes - 2 lbs
- Sugar - 1 teaspoon
- Salt - to taste
Step by Step guide
Step 1
Separate the florets, rinse the cauliflower in cold water with the juice of half a lemon. Bring a large pot of salted water to a boil, add the cauliflower and a little milk, and cook uncovered for 20 minutes until it becomes soft.
Step 2
Drain the water from the pot with the cauliflower, being careful not to damage the florets, rinse under cold water, and place on a paper towel to dry. Then transfer to a bowl and mash with a fork.
Step 3
Grease a 19 cm diameter baking dish with butter. Melt the remaining butter with two tablespoons of sunflower oil in a saucepan, stir in the flour, and cook, stirring, for 2 minutes. Then slowly pour in the milk, add freshly grated nutmeg, season with salt, and cook, stirring, for another 8 minutes. Remove the saucepan from the heat. Beat two eggs and gently stir them into the sauce. Repeat with the remaining two eggs. Add the grated cheese. When the sauce is smooth, add the cauliflower.
Step 4
Transfer the mixture to the greased baking dish and place it in a deep baking tray. Pour boiling water into the tray – about halfway up the sides of the cauliflower dish. Place the entire setup in the preheated oven and bake for 1 hour at 320°F.
Step 5
While the cauliflower is baking, make the tomato sauce: blanch the tomatoes, peel them, and chop them. Heat 3 tablespoons of sunflower oil in a skillet, add the tomatoes, and sauté them over low heat, mashing with a spatula for 15 minutes. Allow the mixture to cool slightly, transfer to a blender, and blend. Add sugar, salt, and mix again.
Step 6
Remove the dish from the oven. Run a knife along the edge of the dish. Cover the pie with a plate and flip it over. Drizzle with warm tomato sauce and serve immediately.
