Ingredients
- Cauliflower - 2 lbs
- Coarse Salt - to taste
- Butter - 1 tablespoon
- Vegetable Oil - 2 tablespoons
- Onion - 3 pieces
- Curry - 1½ teaspoons
- Water - 4 cups
- Chopped Sage Leaves - 2 tablespoons
- Chicken Broth - 2 cups
Step by Step guide
Step 1
Cut the cauliflower into small florets to make about 6 cups. Slice the onion into thin half-rings.
Step 2
Preheat the oven to 450°F (230°C).
Step 3
Spread the cauliflower on a baking sheet, drizzle with vegetable oil, and sprinkle with salt. Toss and roast until golden brown for 25 minutes.
Step 4
In a saucepan, melt the butter over medium heat. Add the onion and sauté for 5 minutes until soft.
Step 5
Then add the curry, cauliflower, water, and broth. Cover, bring to a boil, reduce the heat, uncover, and simmer for 5 minutes.
Step 6
Using a slotted spoon, transfer 3 cups of the cauliflower to a bowl.
Step 7
Blend the remaining cauliflower in a blender until smooth, adding broth to achieve the desired consistency. Season with salt and pour into bowls.
Step 8
Garnish with the reserved cauliflower and sprinkle with parsley.
