- Cauliflower - 1 head
- Vegetable Oil - 2 tablespoons
- Salt - to taste
- Butter - 1 tablespoon
- Onion - 3 pieces
- Curry Powder - 1½ teaspoons
- Water - 4 cups
- Vegetable Broth - 2 cups
- Parsley - 1.4 oz
Step by Step guide
Step 1
Preheat the oven to 450°F (230°C). Spread the cauliflower on a baking sheet with vegetable oil and 1 teaspoon of salt. Arrange evenly on the sheet and roast until the florets are browned, about 25 minutes.
Step 2
In a medium-sized pot, melt the butter over medium heat. Add the onion and cook until soft, about 5 minutes. Stir in the curry powder, cauliflower, water, and broth, cover, and bring to a boil. Remove the lid, reduce the heat, and simmer for 5 minutes.
Step 3
Using a slotted spoon, transfer 3 cups of cauliflower to a bowl and set aside. Place the remaining florets in a blender or food processor, add 1 teaspoon of salt, and blend until smooth. Stir the puree into the broth in the pot and heat if necessary. Ladle the soup into bowls and garnish with reserved florets and parsley.
