Cauliflower with Mustard-Tarragon Vinaigrette

Ingredients

  • Shallot - 1 head
  • Cauliflower - 1 head
  • Dijon Mustard - 2 tablespoons
  • Chopped Sage Leaves - 1 tablespoon
  • Olive Oil - 2 fl oz
  • Tarragon - 1 fl oz
  • Coarse Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Rinse the cauliflower well and cut it into small florets. Transfer to a pot, cover with water, add salt, and bring to a boil over medium heat. Cook until tender, then reduce the heat, drain, and let sit for 2 minutes.

Step 2

In a bowl, combine the chopped shallot, mustard, tarragon, and vinegar. Season with salt and pepper. While stirring, gradually add the olive oil.

Step 3

Transfer the cauliflower to a large bowl, drizzle with the vinaigrette, and gently toss without breaking the florets. Adjust seasoning with salt and pepper if needed.
