Ingredients
- Celery stalk - 12 pieces
- Bartlett Pear - 21.2 oz
- Leek - 6.3 oz
- Butter - 4½ spoons
- Wheat Flour - 1½ spoons
- Chicken Broth - 25 fl oz
- Bay leaf - 3 pieces
- Thyme - 0.2 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Slice the celery thinly and cut half a kilogram of pears into fairly large cubes.
Step 2
Melt the butter in a pot, add the celery, diced pears, and thyme, along with the finely chopped leeks and bay leaves. Cover with a lid and cook, stirring occasionally, until the celery begins to soften, about eight minutes.
Step 3
Stir the flour into the contents of the pot, pour in the broth (lightly salted), and bring to a boil. Cover the soup with a lid and simmer on low heat for twenty minutes.
Step 4
Remove the bay leaves from the soup, blend it into a smooth puree, and season with salt and pepper.
Step 5
Dice 100 grams of pears. Gently warm the soup, ladle it into bowls, and garnish with the pears and celery leaves.
