Ingredients
- Olive Oil - 4 tablespoons
- Celery salt - 2 bunches
- Onion - 3 heads
- Salad Potatoes - 26.5 oz
- Veal Shank - 2 pieces
- Parsley - 3 stems
- Salt - to taste
Step by Step guide
Step 1
Wash the celery stems and cut them into sticks about 5 cm long. Finely chop the onion and peel and cut the potatoes into pieces.
Step 2
Heat the oil in a large pot, add the celery and onion, and cook over low heat, stirring, for 10 minutes until the vegetables are soft. Add the potatoes, veal shanks, and 2.5 liters of water. Bring to a boil, then reduce the heat and let it simmer for 1 hour.
Step 3
Remove from heat and let cool slightly. Remove the shanks and blend the soup in batches using a blender. Return the soup to a clean pot, season with salt to taste. Then reheat if necessary. Pour into a soup tureen and sprinkle with roughly chopped parsley.
