Ingredients
- Celery salt - 1 piece
- Boiled White Round Rice - 1½ cups
- Butter - 1 tablespoon
- Water - 8 fl oz
- Chicken Egg - 1 piece
- Breadcrumbs - 3.5 oz
- Vegetable Oil - 1 qt
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the celery root and grate it on a fine grater. Sauté over low heat with butter and water or vegetable broth.
Step 2
Mix the celery with rice and egg, add salt and pepper. Form croquettes about 2 fingers thick.
Step 3
Coat the croquettes in breadcrumbs and fry in hot oil until golden brown. Place the cooked croquettes on paper towels to remove excess fat. Serve with a green salad.
