Description
This recipe is inspired by a popular chef, but instead of English cheddar, we’ve used regular cottage cheese — making it both cheaper and creamier. By the way, the chef suggests replacing heavy vegetable puddings with these pancakes — they are similar in ingredients but look much more modern. Additionally, feel free to add any vegetables to the celery root: cauliflower, broccoli, parsnip, pumpkin, whatever you like, either together or separately.

- Smoked Ham on the Bone - 2.8 oz
- Celery salt - 7.1 oz
- Breadcrumbs - 3.5 oz
- Wheat Flour - 2.6 oz
- Cottage cheese - 3.5 oz
- Grated Pecorino Pepato Cheese - 2.6 oz
- Dill - 2 sprigs
- Chicken Egg - 6 pieces
- Vegetable Oil - 1 fl oz
- Sour Cream - to taste
- Scallions - to taste
- Salt - to taste
Step by Step guide
Step 1
Finely chop the ham and sauté over medium heat until crispy. Let it cool.
Step 2
Drain the cottage cheese to remove excess water, then pass it through a sieve or blend it in a blender to eliminate any lumps.
Step 3
Grate the celery using a fine grater.
Step 4
Combine the celery with the breadcrumbs, flour, cottage cheese, grated cheese, ham, dill, and beaten eggs. Season with salt and mix well.
Step 5
Heat 1 tablespoon of vegetable oil in a large skillet over medium heat and fry the pancakes in small batches for 3-4 minutes until crispy and golden brown.
Step 6
Transfer the cooked pancakes to a paper towel. Serve with sour cream and chopped green onions.
