Chanterelle Mushroom Soup with Beans
Ingredients
- Carrot - 3.5 oz
- Onion - 3.5 oz
- Semi-Smoked Sausage - 7.1 oz
- Pickled Chanterelles - 12.3 oz
- Chicken Broth - 1 qt
- Garlic - 1 clove
- Passata Tomato Sauce - 5.3 oz
- Parsley - to taste
- White Beans - 5.3 oz
- Olive Oil - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Dice the carrot into very small cubes. Finely chop the onion and garlic.
Step 2
Place a pot over medium heat and add oil. Add the chanterelle mushrooms, season with salt and pepper, and sauté until golden brown, stirring constantly.
Step 3
Add the previously chopped vegetables to the chanterelles. Sauté (be careful not to burn anything).
Step 4
Cut the sausage into small cubes and add it to the pot with the vegetables and chanterelles.
Step 5
Pour in the broth and cook everything for 7 minutes.
Step 6
Then add the tomato sauce, beans, and bring the soup to a boil.
Step 7
Finally, add chopped parsley. Cook for a minute, then remove from heat and serve.
