- Butter - 0.9 oz
- Chocolate eggs - 2 pieces
- Wheat Flour - 1.1 oz
- Milk - 4 fl oz
- Grated Pecorino Pepato Cheese - 1 tablespoon
- Semi-soft cream cheese - 1.8 oz
- Hard Cheese - 1.8 oz
- Semi-soft cream cheese - 1.8 oz
- Asparagus - 7 pieces
- Chopped Sage Leaves - 1 tablespoon
- Salt - to taste
Step by Step guide
Step 1
Separate the eggs into whites and yolks. Heat the butter in a saucepan, add the flour and cook, stirring vigorously, for 1 minute. Remove from heat, continuing to stir, and gradually pour in the milk. Add the yolks one at a time, mixing thoroughly each time.
Step 2
Preheat the oven to 392°F. Whip the egg whites into a fluffy foam and gradually fold them into the batter. Add the chopped basil and lightly salt. Spread the batter on a parchment-lined baking sheet to a thickness of about 2 cm (forming a rectangle of 20x12 cm), and sprinkle with Parmesan. Place in the oven for 15 minutes, let cool slightly, turn it onto a kitchen towel, remove the parchment, and roll it up. Allow to cool completely.
Step 3
For the filling, mix the cottage cheese, hard cheese, and cream cheese. Blanch the asparagus in boiling salted water.
Step 4
Carefully unroll the batter and spread a layer of the cheese mixture evenly over the surface, then place the asparagus on top. Roll it up tightly, wrap in plastic wrap, and refrigerate for at least 1 hour. Unwrap the plastic and slice the roll into serving pieces.
