Cheese balls with Roquefort and walnuts
Ingredients
- Butter - 3.5 oz
- Ricotta cheese - 24.7 oz
- Meyer Lemon Juice - 2 tablespoons
- Worcestershire Sauce - ½ teaspoon
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Shallot - 1 head
- Brandy - 2 teaspoons
- Roquefort cheese - 6 oz
- Roasted Peanuts - 4.6 oz
Step by Step guide
Step 1
In a bowl, mix softened butter, ricotta, lemon juice, Worcestershire sauce, and season with salt and pepper. Blend well at low speed until smooth.
Step 2
Add crumbled Roquefort, chopped shallot, and brandy (if desired) to the mixture. Mix well again.
Step 3
Refrigerate the mixture for 30 minutes.
Step 4
Chop the walnuts and place them on a plate.
Step 5
Form balls from the mixture, about the size of a walnut, and roll them in the walnuts. Place on a serving dish and chill again.
