Ingredients
- Onion - 2 pieces
- Wheat Flour - 2 tablespoons
- Celery salt - 3.5 oz
- Butter - 2 tablespoons
- Water - 1 qt
- White bread - 5 pieces
- Salad Potatoes - 3 pieces
- Sliced Processed Cheese - 14.1 oz
- Hard Cheese - 5.3 oz
- Olive Oil - 4 tablespoons
- Dill - 1 tablespoon
- Dry White Wine - ½ cup
Step by Step guide
Step 1
Chop one onion, potatoes, and celery root coarsely. In a pot, heat 2 tablespoons of olive oil and sauté the vegetables for 1–2 minutes.
Step 2
Pour in the wine, cook for 2 minutes, then add hot water to the vegetables. Bring to a boil, skim off the foam, and reduce the heat. Cook for 30 minutes.
Step 3
Blend the cooked vegetables until smooth. Grate the cheese and add it to the soup. Season with salt, pepper, and nutmeg. Stirring, bring the soup to a boil and remove from heat.
Step 4
Cut circles with a diameter of 7–8 cm from the bread and fry them in butter. Slice the remaining onion into rings, coat in flour, and fry in olive oil until crispy. Place the fried onion on each crouton and sprinkle with dill.
Step 5
Pour the soup into bowls, top with croutons, and serve.
