Ingredients
- Salad Potatoes - 2 pieces
- Milk - 1 fl oz
- Chicken Egg - 1 piece
- Cheese Spread - 6.2 oz
- Chopped Sage Leaves - 2 tablespoons
- Egg white - 2 pieces
- Water - 3 fl oz
- Breadcrumbs - 10.6 oz
- Chopped almonds - 1.8 oz
- Butter - 2.1 oz
- Wheat Flour - 0.5 oz
- Vegetable Oil - to taste
- Mustard Greens - 0.2 oz
- Cream - 2 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Boil the potatoes in salted boiling water until soft. Drain the water, add half of the butter, and mash well. Then add the beaten egg whites, milk, grated cheese, and parsley. Take 1 tablespoon of the mixture and shape it into croquettes. Place 1 almond inside each.
Step 2
Mix the egg and 45 ml of water. Quickly dip the croquettes in the egg mixture, then roll in breadcrumbs to coat them completely. Chill for 1 hour.
Step 3
For the sauce, melt the remaining butter in a pan. Add the flour and lightly fry for 1 minute. Remove from heat and stir in the remaining water, cream, mustard, salt, and pepper. Return to heat and cook, stirring, until the sauce thickens.
Step 4
Heat vegetable oil in a pan and fry the croquettes until golden brown. Place on paper towels.
Step 5
Arrange on plates and serve with the sauce.
