Step 1
Grate the cheese using a fine grater. Melt the butter.
Step 2
In a saucepan, add 4 tablespoons of water, 2 tablespoons of vinegar, a pinch of salt, and a pinch of pepper, and reduce the mixture by two-thirds.
Step 3
Place in a water bath, add the egg yolks and cheese, and gradually mix in the melted butter in small portions until the sauce reaches a creamy consistency.
