- Butter - 2.8 oz
- Wheat Flour - 4 tablespoons

- Gruyère cheese - 3.5 oz
- Farm fresh eggs - 5 pieces
- Salt - to taste
- Egg white - 4 pieces
Step by Step guide
Step 1
Preheat the oven to 356°F. Generously grease the inner surface of a soufflé dish (22 cm in diameter) with butter. Melt the butter in a pan, add both types of flour, and cook, stirring constantly, for a couple of minutes. Gradually add the milk in small amounts. Bring the mixture to a boil, reduce the heat, and simmer without allowing it to boil again for another 5 minutes. Remember to stir the mixture constantly.
Step 2
Remove from heat and add the cheese to the mixture. Allow it to cool slightly. Then, gradually stir in the egg yolks (one at a time) and season with salt to taste. In a clean, dry bowl, beat half of the egg whites until stiff peaks form. Gently fold the egg whites into the mixture. Now repeat this process with the remaining egg whites.
Step 3
Pour the mixture into the dish and bake for 20 minutes, then increase the temperature to 428°F and continue baking for another 10–15 minutes. The soufflé should rise and become golden brown. It is important to serve the dish immediately after cooking. If you wait even a few minutes, the soufflé will deflate.
