Cheese Soufflé with Ham

Ingredients

  • Butter - 1.6 oz
  • Shallot - 1 piece
  • Wheat Flour - 2 tablespoons
  • Milk - 10 fl oz
  • English Dry Mustard - ½ teaspoon
  • White Cheddar Cheese - 3.5 oz
  • Cayenne Pepper - a pinch
  • Ground Nutmeg - a pinch
  • Whole egg - 6 pieces
  • Egg white - 6 pieces
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Ham - 3.5 oz
  • Scallions - 1 bunch
  • Grated Pecorino Pepato Cheese - 1.1 oz

Step by Step guide

Step 1

Melt 2 tablespoons of butter over medium heat. Add the shallot and cook for 1–2 minutes. Stir in the flour and mix well to avoid lumps. Gradually add the milk while whisking continuously. Bring the sauce to a boil, stirring until it thickens, about 5 minutes. Remove from heat, add the shredded cheddar, mustard powder, pepper, nutmeg, egg yolks, salt, and pepper. Return to medium heat for a maximum of 3–4 minutes.

Step 2

Transfer the cheese mixture to a large bowl, add the ham and green onion, and cool for 30 minutes.

Step 3

Preheat the oven to 356°F. Grease six soufflé dishes with the remaining butter. Sprinkle the bottoms and sides of the dishes with Parmesan, shaking out the excess.

Step 4

In a large bowl, whisk the egg whites. In 3 additions, fold the whipped egg whites into the cooled cheese mixture to aerate the batter.

Step 5

Carefully distribute the batter into the prepared dishes and place in the oven for approximately 30 minutes. Serve immediately.
