Ingredients
- Celery stalk - 8.8 oz
- Onion - 1 head
- Salad Potatoes - 3 pieces
- Olive Oil - 2 tablespoons
- Wheat Flour - 2 tablespoons
- Whole egg - 1 piece
- Cheese Spread - 3.5 oz
- Cream - 3 fl oz
- Meyer Lemon Juice - 2 tablespoons
- Herbs - 0.7 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the celery and grate it on a coarse grater.
Step 2
Peel and finely chop the onion.
Step 3
Peel the potatoes, boil until half-cooked, and cut into cubes.
Step 4
Sauté the onion in olive oil. Add the celery, sprinkle with flour, and fry for 5 minutes.
Step 5
Pour broth over the sautéed vegetables and bring to a boil. Add the potatoes and cook for 5 minutes. Blend the soup in a blender.
Step 6
Bring the soup to a boil again.
Step 7
Mix the egg yolk with the cream, add to the soup. Bring to a boil. Season with salt and pepper, add lemon juice and grated cheese.
Step 8
Chop the herbs and sprinkle over the soup.
