Description
This thick and aromatic soup is sure to please your loved ones. Some cooks add smoked sausage and pasta to the cheese soup. In any case, we can diversify the recipe to our taste.
Ingredients
- Onion - 2 pieces
- Carrot - 1 piece
- Vegetable Oil - 0 fl oz
- Sliced Processed Cheese - 3 pieces
- Potato - 1 piece
- Semi-Smoked Sausage - to taste
- Water - 1 qt
- Semolina - 5 tablespoons
Step by Step guide
Step 1
Peel, rinse, and slice the onion into half-rings. Peel the carrot and grate it on a coarse grater. Heat the vegetable oil in a frying pan and sauté the vegetables until golden (you can sauté them directly in the pot where you will cook the soup).
Step 2
In a pot, pour boiling water over the onion and carrot.
Step 3
Cut the processed cheese (I used regular 'Friendship' cheese) into small cubes (or grate it) and add it to the soup, stirring until the cheese dissolves (if it doesn't dissolve completely, that's okay), add salt and pepper, and let it simmer for another 5–7 minutes.
Step 4
Add 5 tablespoons of semolina (to make the soup thicker), and cook for another 5 minutes.
Step 5
Blend directly in the pot until creamy.
Step 6
Peel the tomatoes (if you pour boiling water over the tomatoes, the skin comes off very easily), and cut them into cubes. Slice the sausage into thin strips or small cubes and add it to the pot with the soup, cooking for another 5–7 minutes.
Step 7
Serve the finished soup in bowls and sprinkle with finely chopped parsley and dill.
