Ingredients
- Onion - 1 head
- Chicken fillet - 1 piece
- White Cheddar Cheese - 1.8 oz
- Tortillas - 2 pieces
- Passata Tomato Sauce - 3.5 oz
Step by Step guide
Step 1
Finely chop the onion and sauté it in a small amount of oil until it turns a light golden color. Transfer to a bowl.
Step 2
Slice the chicken fillet into thin strips (no thicker than 1 cm) and sauté in olive oil over high heat for 2 minutes, stirring frequently. Add tomato paste, pepper, and salt, mix well, and cook for another 30 seconds before transferring the meat to the onions.
Step 3
Grate the cheese using a coarse grater. This can be cheddar, parmesan, gouda, or any other hard or semi-hard cheese.
Step 4
Place one tortilla in a hot dry skillet and sprinkle a layer of cheese on top.
Step 5
Spread a layer of filling over the cheese, then add another layer of cheese on top. Finally, cover with a second tortilla.
Step 6
Cook for 2–3 minutes, then carefully flip and sauté the other side for another 1–2 minutes.
Step 7
Cut the quesadilla into four pieces.

Serve hot.
