Chicken and Wheat Groats Soup

Ingredients

  • Olive Oil - 4 tablespoons
  • Chicken fillet - 2 pieces
  • Chicken Broth - 4½ cups
  • Buckwheat Groats - 4 tablespoons
  • Garlic - 1 clove
  • Parsley - 1.4 oz
  • Meyer Lemon Juice - 1 tablespoon
  • Onion - 1 piece
  • Apple juice with pulp - 2 tablespoons
  • Walnuts - 2 tablespoons
  • Ground Nutmeg - to taste
  • Ground Black Pepper - to taste
  • Salt - to taste

Step by Step guide

Step 1

Cut the fillet into cubes, season with salt and pepper, and sauté in part of the oil. Dice the onion and sauté in the remaining oil.

Step 2

Pour the chicken broth over the meat, add the groats, and cook for 30–35 minutes. Then add the sautéed onion, chopped garlic, herbs, nutmeg, lemon juice, and apple juice, season with salt and pepper. Bring the soup to a boil.

Step 3

Serve the soup with sour cream, garnished with chopped nuts and herbs.
