Chicken broth with semolina dumplings

Ingredients

  • Poultry - 17.6 oz
  • Turnips - 2 pieces
  • Onion - 1 head
  • Parsley - 2 stems
  • Celery salt - 1 stem
  • Butter - 1.1 oz
  • Semolina - 3.5 oz
  • Farm fresh eggs - 2 pieces
  • Salt - to taste
  • Herbs - 1.8 oz

Step by Step guide

Step 1

Pour cold water over the chicken and bring to a boil. Skim off the foam, add carrots, celery, parsley, and onion. Season with salt. Cook until done.

Step 2

Remove the chicken, separate the meat from the bones, and cut it into small pieces.

Step 3

Strain the broth and return it to the heat. Add the chicken meat.

Step 4

Knead the dough from semolina with butter, egg, and salt. Divide the dough into dumplings and drop them into the broth.

Step 5

Sprinkle the finished broth with chopped herbs.
