Chicken Burrito
Ingredients
- Sweet Pepper - 1.8 oz
- Poultry - 5.6 oz
- Tomatoes - 2 pieces
- Canned Baby Beets - 1 can
- Canned Corn - ½ cans
- Cheese Spread - 2.5 oz
- Garlic - 1 clove
- Onion - ½ heads
- Meyer Lemon Juice - 1 tablespoon
- Ground Black Pepper - to taste
- Salt - to taste
- Tortillas - 2 pieces
- Cilantro - ½ bunches
Step by Step guide
Step 1
Slice the vegetables into thin strips and do the same with the chicken. Sauté the vegetables over high heat for 3 minutes. Add the chicken, stir frequently, and cook for another 3 minutes.
Step 2
Add garlic and diced tomatoes, and simmer over medium heat for about 10 minutes. Season with salt and pepper, and add ground coriander.
Step 3
Take the tortilla and place it in the oven to warm up slightly (otherwise, it will become brittle). I used Armenian lavash, 2 sheets.
Step 4
Place the tortilla on the table, add the chicken with vegetables on top, a tablespoon of beans, corn to taste, and sprinkle with cheese. Roll it up, folding in the edges.
Step 5
Transfer the burrito to the baking pan (lightly grease the pan with oil).
Step 6
Spread the top of the burrito with the prepared salsa sauce (to make the sauce, blend all the ingredients together): 1 tomato, 4 sprigs of cilantro, 1 garlic clove, half a medium onion, and 1 teaspoon of lemon juice. Season with salt and pepper to taste.
Step 7
Sprinkle with cheese and place in the oven until the cheese melts.
