Ingredients

  • Canned Corn - 1 can
  • Skin-On Chicken Breasts - 1 piece
  • Rice - 1 glass
  • Canned Baby Beets - 1 can
  • Spanish onions - 1 head
  • Tortillas - 6 pieces
  • Grated Pecorino Pepato Cheese - 5.3 oz
  • Avocado - 1 piece
  • Meyer Lemon Juice - 2 spoons
  • Olive Oil - 1 tablespoon
  • Tomatoes - 1 piece
  • Sweet Pepper - 1 piece
  • Mild Chili Spice - 1 piece
  • Cilantro - to taste

Step by Step guide

Step 1

Boil the rice.

Step 2

Boil the chicken breast.

Step 3

Sauté the onions for 5 minutes, then add the pieces of fillet, rice, beans, and corn, and cook for 3 minutes. Finally, add the cheese.

Step 4

Spread the mixture onto warmed tortillas, adding 1 to 2 tablespoons of avocado sauce. To make the sauce, combine the flesh of the avocado with lemon juice and olive oil.

Step 5

Fold into an envelope shape and fry in a skillet on both sides.

Step 6

Serve with salsa. To make the salsa, blend sweet pepper, chili, tomato, and cilantro with olive oil.
