Ingredients
- Mayonnaise - 1.4 oz
- Chicken fillet - 7.1 oz
- Chicken Egg - 2 pieces
- Wheat Flour - 2 spoons
- Hazelnut - 3.5 oz
- Demi-Glace Sauce - 3 fl oz
- Red Grape Juice - 3 fl oz
- Sugar - 0.4 oz
- Salt - to taste
- Balsamic Vinegar - 0 fl oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a saucepan, caramelize the sugar, pour in the wine, and reduce it by two-thirds. Add the demi-glace and balsamic vinegar, and simmer on the heat for ten minutes.
Step 2
Finely chop the chicken fillet. Mix in the mayonnaise, eggs, flour, salt, and pepper. Preheat the oven to 194°F.
Step 3
Divide the chicken mixture in half and place it on plastic wrap. Tightly roll it into cylinders with a diameter of 2–3 cm, tying the ends of the wrap. Place in the oven for about fifteen minutes (the internal temperature of the resulting rolls should reach 158°F). Allow to cool.
Step 4
Trim the ends of the plastic wrap, remove the chicken popsicle, and insert it onto popsicle sticks – just like a real popsicle.
Step 5
Finely chop the hazelnuts. Dip the ice cream in the wine sauce and coat it with the nuts. Serve with the sauce and chopped hazelnuts.
