Chicken Julienne with Mushrooms
Ingredients
- Melted Cheese - 1.8 oz
- Poultry - 3.2 oz
- Pickled Chanterelles - 2.1 oz
- Milk - 7 fl oz
- Wheat Flour - 0.4 oz
- Nutmeg - 0 oz
- Butter - 1.1 oz
- Thyme - 0.1 oz
- Garlic - 1 clove
Step by Step guide
Step 1
Cut the chicken into thin strips, chop the mushrooms finely, and grate the cheese on a coarse grater.
Step 2
Crush, peel, and finely chop the garlic, and separate the thyme leaves from the stems.
Step 3
Heat 2 tablespoons of vegetable oil in a pan and sauté the chicken for 1 minute over high heat, lower the heat, add the mushrooms, garlic, and sauté for another 2 minutes.
Step 4
Add half of the thyme leaves, season with salt and pepper, stir, and remove from heat.
Step 5
For the béchamel sauce, sauté the flour in a dry pan over low heat until golden, add the butter, stir, and pour in the cold milk, bringing it to a boil while whisking to avoid lumps, add nutmeg, lightly season with salt and pepper, and remove from heat.
Step 6
Place the chicken with mushrooms and garlic in a cocotte dish, pour over the béchamel sauce, sprinkle with cheese, and bake in a preheated oven at 392°F for 5 minutes.
Step 7
Serve, garnished with the remaining thyme leaves.
