Chicken Liver Julienne with Mushrooms
Ingredients
- Chicken Liver - 10.6 oz
- Onion - 2 heads
- Pickled Chanterelles - 7.1 oz
- Butter - 2 tablespoons
- Sour Cream - 1.8 oz
- Hard Cheese - 2.5 oz
- Salt - to taste
- Mayonnaise - 3.5 oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Wash the chicken liver, pat it dry, and cut it into small pieces.
Step 2
Peel, wash, and chop the onion.
Step 3
Clean and finely chop the champignon mushrooms.
Step 4
In a skillet, melt the butter and sauté the onion for 3 minutes. Add the liver and fry, stirring, for 3 minutes. Add the mushrooms and cook for another 5 minutes. Season with salt and pepper.
Step 5
Preheat the oven to 392°F.
Step 6
Grate the cheese on a fine grater.
Step 7
Place the sautéed liver with onions and mushrooms into heatproof individual ramekins. Sprinkle with cheese on top.
Step 8
Mix the sour cream with mayonnaise and lightly whip. Pour the resulting sauce over the liver and bake in the oven for 15 minutes.
Step 9
Sprinkle the finished julienne with chopped herbs.
