- Chicken Liver - 17.6 oz
- Butter - 4.4 oz
- Brandy - 1 fl oz
- Sherry - 1 fl oz
- Garlic - 2 cloves
- Black Cumin (Cumin) - 0.2 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Sauté the chicken liver in 50 grams of butter until it has a light brown crust but remains pink inside. Transfer the liver to a blender.
Step 2
Add the brandy to the liver juices, bring to a boil, and then add the sherry. Pour this mixture over the liver.
Step 3
Add finely chopped garlic, cumin, 75 grams of butter, salt, and freshly ground black pepper. Mix well until it reaches a smooth pâté consistency.
Step 4
Transfer to small jars and drizzle with melted butter. Leave in the refrigerator for two days.
