Ingredients
- Butter - 6.2 oz
- Chicken Liver - 15.9 oz
- Shallot - 2 pieces
- Thyme - 0.4 oz
- Garlic - 2 cloves
- Brandy - 2 tablespoons
- Anchovy fillet - 2 teaspoons
- Ground Black Pepper - ½ teaspoon
- Clarified Butter - 1.9 oz
Step by Step guide
Step 1
Melt 15 grams of butter in a skillet and sauté half of the liver for 4-5 minutes until golden brown, but still slightly pink inside.
Step 2
Repeat the same with the remaining liver.
Step 3
Transfer the liver with the juices to a blender.
Step 4
In the same skillet, melt another 15 grams of butter, add finely chopped shallots, thyme, and minced garlic. Sauté until the onion is soft, without browning.
Step 5
Add brandy, anchovy essence, and black pepper to the skillet, stir, and transfer to the blender along with the remaining butter.
Step 6
Blend until smooth. Transfer to a serving bowl and cover with plastic wrap, then chill.
Step 7
If you do not plan to consume the pâté within 48 hours, pour clarified butter on top and refrigerate.
