Ingredients
- Butter - 7.1 oz
- Ocean salt - to taste
- Chicken Liver - 10.6 oz
- Onion - 2.8 oz
- Carrot - 5.6 oz
- White bread - to taste
- Port Wine - 1 fl oz
- 33% Cream - 5 fl oz
- Nutmeg - 0.1 oz
- Vegetable Oil - 3 fl oz
- Ground Black Pepper - to taste
- Spanish onions - 22.2 oz
- Chicken Broth - 3 fl oz
- Sugar - 3.5 oz
- Red Grape Juice - 12 fl oz
- Thyme - 0.2 oz
- Spices - to taste
Step by Step guide
Step 1
Sauté the liver in vegetable oil until cooked (50 ml).
Step 2
Also sauté the onion and carrot well in vegetable oil (50 ml).
Step 3
For the jam, caramelize the sugar until light brown.
Step 4
Then add the sliced red onion, sauté with butter (100 g).
Step 5
Pour in the red wine and a little chicken broth.
Step 6
Simmer on low heat until thickened, season with salt and pepper, and add chopped thyme.
Step 7
For the pâté, blend the liver, sautéed vegetables, port wine, butter (100 g), nutmeg, and cream. Add salt and pepper.
Step 8
Serve with red onion jam and bread.
