Chicken muffins with cheese
Ingredients
- Ranch Dressing - ¼ glasses
- Wheat Flour - ½ glasses
- Milk - ½ glasses
- Skin-On Chicken Breasts - 2 pieces
- Grated Pecorino Pepato Cheese - 1 glass
- Chicken Egg - 2 pieces
- Herbs - 1 bunch
Step by Step guide
Step 1
Boil the chicken breasts, let them cool, and cut into pieces.
Step 2
Mix together the milk, ranch dressing, flour, and eggs until smooth.
Step 3
Chop your favorite herbs. In my case, it's cilantro.
Step 4
Grate the cheese.
Step 5
Mix together the chicken, cheese, part of the cilantro, and the milk-egg mixture with the flour. Pour in only part of the mixture, as if you were dressing a salad. We will need the remaining mixture later. The leftover cilantro will also come in handy.
Step 6
Lightly dust the cupcake mold with flour. Spoon in the chicken. Add the remaining milk and egg mixture with flour.
Step 7
Bake in the oven until fully cooked (about 20 minutes) at a temperature of 356°F.
Step 8
Sprinkle the finished muffins with the remaining cilantro on top.
Step 9
Let them cool and serve. They pair wonderfully with salsa.
