Description

  • Chicken Liver - 14.1 oz
  • Onion - 1 head
  • Garlic - 1 clove
  • Vegetable Oil - 1 fl oz
  • Butter - 9.9 oz
  • Bay leaf - 1 piece
  • Thyme - 1 sprig
  • Cognac - 1 fl oz
  • Salt - to taste
  • Ground Black Pepper - to taste

Prepare the necessary ingredients.

Slice the onion into thin strips.

Prepare the liver.

In a saucepan, heat 30 grams of butter and 30 grams of vegetable oil.

Add the onion, sliced into thin strips, and sauté until translucent.

Remove the bay leaf and sprig of thyme, then transfer the liver, onion, and garlic to a blender. Blend until you achieve a coarse puree. Gradually add the butter directly into the running blender and whip until you reach a smooth, homogeneous texture.
