Chicken Soup with Homemade Noodles

Ingredients

  • Chicken Egg - 1 piece
  • Wheat Flour - to taste
  • Poultry - ½ piece
  • Celery stalk - 1 piece
  • Potato - 10.6 oz
  • Carrot - ½ piece
  • Onion - ½ piece
  • Curry - 1 teaspoon
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Bay leaf - to taste
  • Dill - to taste

Step by Step guide

Step 1

Wash the chicken, place it in a pot, and cover it with water (enough to submerge the chicken), add a whole onion, allspice and black pepper, bay leaf, and cook the broth until the chicken is done. Once the chicken is cooked, remove it from the pot.

Step 2

Dice the potatoes. Chop the carrot.

Step 3

After removing the cooked chicken from the broth, add the potatoes and carrots, and cook them until tender.

Step 4

Now let's prepare the noodles. Sift about 0.5 cups of flour onto the table, add salt. Make a small well in the flour and pour in the beaten egg. Gradually mix the flour into the egg with a spoon. Add enough flour until the egg absorbs it all. Then knead the dough by hand, adding flour until a stiff dough forms. Knead the dough well. Divide it into 2 halves. Roll each piece of dough into a sheet about 1 mm thick. While rolling, constantly sprinkle the dough and the surface with flour. Roll each sheet into a tight tube. Before rolling, sprinkle it with flour to prevent the noodles from sticking together when cutting. Cut the noodles thinly.

Step 5

To ensure the noodles separate and to remove excess flour, gently toss the noodles in the air above the table. If preparing in advance, they should be dried and stored like any pasta. If cooking during the soup preparation, there is no need to dry them; just add the cut noodles directly into the soup (don’t forget to shake them well).

Step 6

Now add the shredded chicken meat (removed from the bones) to the broth. Next, add the noodles to the broth and cook for 3 minutes.

Step 7

Add salt, curry, and ground black pepper to taste, as well as chopped herbs, and cook for 1 minute.
