Chicken Soup with Mushrooms
Ingredients
- Cornish Hen - 1 piece
- Water - 1½ liters
- Carrot - 1 piece
- Pickled Chanterelles - 5.3 oz
- Butter - 0.7 oz
- Olive Oil - 1 tablespoon
- Ocean salt - to taste
- Herbs - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Chop the mushrooms coarsely.
Step 2
Dice the carrot into small cubes.
Step 3
Cut the chicken in half.
Step 4
Pour in drinking water and place on high heat.
Step 5
Once the water boils, skim off the foam and reduce the heat. After boiling, the total cooking time is 20–22 minutes over medium heat.
Step 6
In a skillet, heat the butter and olive oil.
Step 7
Add the mushrooms to the oil and sauté over medium heat for about 5–7 minutes. Season with salt and pepper at the end.
Step 8
Add the carrot 10 minutes before the end of cooking.
Step 9
Cover with a lid. If the soup is boiling too vigorously, reduce the heat slightly.

After 5 minutes, add the mushrooms and stir. Cover with the lid again.
Step 11
When the soup is ready, remove the chicken, let it cool slightly, and shred it. Then return it to the soup.
Step 12
Pour into a deep bowl, season with salt to taste, garnish with herbs, and serve.
