Ingredients
- Soy Sauce - 1 tablespoon
- Chicken Thighs - 2 lbs
- Sherry - 1 tablespoon
- Sugar - 1 tablespoon
- Vegetable Oil - 1 fl oz
- Ginger - 1.8 oz
- Scallions - 0.7 oz
- Eel - 2 pieces
- Corn Flour for Polenta - 1 tablespoon
- Oyster Mushrooms - 4 spoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Remove the meat from the chicken bones and chop it finely. Not to the consistency of minced meat, but small enough. Marinate the chopped meat for fifteen minutes in a mixture of soy sauce, sherry, corn flour, sugar, salt, and pepper.
Step 2
In a wok, heat vegetable oil and sauté the finely chopped ginger for one minute. Add the marinated chicken and stir-fry for three minutes.
Step 3
Then add the oyster sauce and finely chopped green onions, and sauté for another minute.
Step 4
Serve hot, wrapped in lettuce leaves.
