- Chickpea - 17.6 oz
- Garlic - 1 clove
- Meyer Lemon Juice - 1½ spoons
- Olive Oil - 3 spoons
- Fresh Mint - 3 spoons
- Coarse Salt - ¾ spoons
- Ground Black Pepper - ¼ spoons
Step by Step guide
Step 1
Drain the liquid from the can of chickpeas. Using a knife or a mortar and pestle, turn the garlic into a paste, seasoning it with salt and pepper, and mix thoroughly. Add olive oil, lemon juice, and additional oil to the garlic paste, and blend the mixture until smooth.
Step 2
Mash the chickpeas with a fork, then mix with the paste until smooth. Let the dip sit at room temperature for about an hour.
Step 3
Add finely chopped mint leaves, stir, and serve with crostini.
