Chilled Almond Soup
Ingredients
- Chopped almonds - 7.1 oz
- Olive Oil - 7 fl oz
- Garlic - 3 cloves
- Malt Vinegar - 1 tablespoon
- Salt - to taste
- Grapefruits - 3.9 oz
- Apple - 1 piece
Step by Step guide
Step 1
Remove the skins from the almonds (place them in a deep bowl, cover with boiling water, and let sit for 3–4 minutes. Drain the water and squeeze the nuts out of their skins).
Step 2
Place the almonds in a blender with the olive oil (the oil should slightly cover the nuts), add the garlic, pour in the vinegar, season with salt, and blend until smooth. While the blender is running, add 340 ml of cold water.
Step 3
Pour the soup into a large soup tureen, and if it is too thick, add more water. Cover the tureen with plastic wrap and place it in a cool place.
Step 4
Before serving, add ice cubes to the soup. Serve with grapes (cut each grape in half) and slices of apple.
