- Butter - 1 teaspoon
- Garlic - 2 cloves
- Onion - 1 head
- Fresh Rose Hips - 2 sprigs
- Courgette - 8.8 oz
- Frozen green bean pods - 8.8 oz
- Chicken Broth - 25 fl oz
- Mint Leaves - 0.7 oz
- Natural Yogurt - 17.6 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a pot, melt the butter and add the minced garlic, finely chopped onion, and rosemary. Sauté for 5 minutes. Add the thinly sliced zucchini and cook for another 5 minutes until soft, without browning.
Step 2
Add the peas and broth, bring to a boil, cover, and simmer for 10 minutes until the zucchini is tender. Remove from heat and let cool, discarding the rosemary sprigs.
Step 3
In the cooled soup, add the chopped mint and yogurt. Blend with an immersion blender until smooth. Season with salt and pepper and chill until serving.
