- Pea shoots - 24.7 oz
- Chicken Broth - 30 fl oz
- Olive Oil - 1 tablespoon
- Scallions - to taste
- Garlic - 2 cloves
- Green Butter - 1 piece
- Fresh Mint - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Heat the oil in a large pot. Add the onions and garlic and sauté for 5-7 minutes.
Step 2
Add the peas to the pot, pour in the broth, and bring to a boil. Cook until done.
Step 3
Add the green lettuce and mint. Cook for another 2-3 minutes.
Step 4
Blend the soup in a blender. Season with salt and pepper.
Step 5
Pour the soup into a serving bowl, cool, and refrigerate for 4 hours.
Step 6
Serve cold, adding thick cream or sour cream.
