Chinese Aspic
Ingredients
- Green Peas - 1.8 oz
- Carrot - 1.8 oz
- Water - 25 fl oz
- Ground Black Pepper - 1 teaspoon
- Star anise - 1 piece
- Cinnamon - 1 piece
- Bay leaf - 1 piece
- Salt - 1 teaspoon
- Chinese Black Rice Vinegar - 1 tablespoon
- Soy Sauce - 1 tablespoon
- Pork fat - 7.1 oz
Step by Step guide
Step 1
Place the washed pork skin, cut into large pieces, into boiling water for 5 minutes. Then remove and rinse.
Step 2
Scrape off excess fat from the skin with a knife and cut the skin into strips.
Step 3
Peel the carrot and cut it into small cubes, blanch the peas in boiling water.
Step 4
Bring 700 ml of water to a boil, add the pork skin and all the spices and seasonings. Reduce the heat to low and simmer until the skin is very soft and the broth reduces.
Step 5
Add the carrot and peas, and cook the aspic until the carrot and peas are tender but not mushy (they should hold their shape).
Step 6
Remove the star anise, cinnamon, and bay leaf. Pour the aspic into a container where it will set. First, cool it to room temperature, then place it in the refrigerator until fully set.
