Ingredients
- Egg noodles for wok - 1.1 oz
- Chicken Egg - 2 pieces
- Grated Ginger Root - 0.4 oz
- Garlic - 1 clove
- Chicken Broth - 1 qt
- Soy Sauce - 1 teaspoon
- Sherry - 2 tablespoons
- Scallions - 2 stalks
- Sesame Oil - 1½ teaspoons
- Salt - to taste
Step by Step guide
Step 1
In a heavy-bottomed pot, combine the broth, soy sauce, sherry, thinly sliced ginger, and crushed garlic clove. When the broth comes to a boil, remove the ginger and garlic. Add the noodles and cook uncovered until soft, about four minutes.
Step 2
While stirring the broth in circular motions, gradually pour in the lightly beaten eggs. Cook the soup on low heat for about a minute, until the egg strands set.
Step 3
Remove the pot from heat, add the sesame oil and finely chopped green onion, and season the soup with salt.
