Chinese Noodle Soup

Ingredients

  • Chicken Broth - 1½ liters
  • Celery stalk - 4 pieces
  • Leek - 1 piece
  • Carrot - 1 piece
  • Scallions - 6 pieces
  • Udon Noodles - 3.5 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Soy Sauce - to taste
  • Sesame Oil - to taste

Step by Step guide

Step 1

Bring the broth to a boil, reduce the heat, and let it simmer until half of the volume evaporates to enhance its flavor.

Step 2

While the broth is simmering, place a medium-sized pot of water on the heat, bring it to a boil, add salt, and put the vegetables in the water. Reduce the heat and blanch them for 2 minutes. Then remove the vegetables with a slotted spoon, drain them in a colander, and rinse under cold water.

Step 3

Add the noodles to the vegetable water, bring to a boil, reduce the heat, and cook, stirring constantly to prevent the noodles from sticking together. After 4 minutes, remove from heat and drain the water.

Step 4

Divide the noodles and vegetables among the bowls. Season the broth with salt and pepper, and pour it over the vegetables and noodles. Serve with soy sauce and sesame oil.
