Chorizo and Egg Sandwich

Ingredients

  • Olive Oil - 1 tablespoon
  • Chorizo - 8 pieces
  • Country Bread - 4 slices
  • Ocean salt - to taste
  • Chicken Egg - 2 pieces
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Toast the bread on a grill pan for a few minutes on each side until characteristic grill marks appear. Drizzle with olive oil.

Step 2

Under the pan with oil, reduce the heat and crack the eggs into it. Fry for 2–3 minutes, spooning the remaining oil over the yolks until the eggs are cooked.

Step 3

Place the toasted bread on serving plates, top with the fried eggs, sprinkle with salt and pepper. Add the crispy chorizo on top. Cover with another slice of bread, cut into triangles, and serve.

Step 4

Preheat the grill pan. In another pan, pour in a little oil. Fry the chorizo slices for a few minutes on both sides until they sizzle and start to release juices. Remove from the pan and drain on a paper towel. Do not discard the oil from the pan, keep the heat on.
