Description

Ingredients
- Carrot - 2 pieces
- Onion - 2 heads
- Celery salt - 2 pieces
- Garlic - 2 cloves
- Sweet Potato - 28.2 oz
- Chorizo - 7.1 oz
- Parsley - 1 bunch
- Olive Oil - to taste
- Red Curry Powder - 1 teaspoon
- Bouillon cube - 2 pieces
- Mild Chili Spice - 1 piece
Step by Step guide
Step 1
Peel and chop the carrots coarsely, chop the celery, peel and chop the onion. Peel and chop the sweet potato coarsely. Slice the chorizo. Chop the parsley.
Step 2
In a large saucepan or directly in the pot, pour in olive oil, heat it up, and add the vegetables and sausage, along with the curry powder. Stir everything with a spatula and cook covered for 10 minutes, until the vegetables start to brown.
Step 3
Dissolve the bouillon cubes in 1.8 liters of boiling water, mix well, and pour into the pot. Bring to a boil and simmer on low heat until the sweet potato is cooked, which will take about 10-15 minutes.
Step 4
Blend the finished soup with an immersion blender and add the chopped chili pepper. Let it sit for about 10-15 minutes and serve.
