Christmas Eggnog
Ingredients
- Vanilla salt - 0.3 oz
- Black tea - to taste
- Lemon - 1 piece
- Dark rum - 13 fl oz
- Egg white - 5 pieces
- Sugar - 10.6 oz
- Ground Cinnamon - ½ teaspoon
- Ground Nutmeg - ¼ teaspoon
- Water - 1 qt
- Ground clove - 3 pieces
Step by Step guide
Step 1
Cut the lemon into wedges with the peel and add to a pot of boiling water. Add cinnamon and cloves, and simmer on low heat with a lid for 15 minutes.
Step 2
Brew strong black tea in the lemon infusion (about 4 tea bags). Add vanilla sugar and nutmeg, stir, and keep covered.
Step 3
While the lemon infusion is cooking and the tea is brewing, vigorously whisk the yolks with the sugar.
Step 4
Remove the lemon and cloves from the pot. Slowly pour the tea into the yolk mixture, continuously stirring until smooth.
Step 5
Transfer the mixture to the pot and place on low heat. Stir constantly until the mixture thickens to a creamy consistency.
Step 6
Remove the mixture from heat and let it cool slightly. While continuing to stir, add the rum and serve immediately in large mugs.
