Ingredients
- Milk - 10 fl oz
- Butter - 2.1 oz
- Wheat Flour - 5 teaspoons
- Cayenne Pepper - a pinch
- Ground Nutmeg - a pinch
- Salt - a pinch
- Ground Black Pepper - a pinch
- Whole egg - 4 pieces
- Egg white - 5 pieces
- Emmental cheese - 7.1 oz
Step by Step guide
Step 1
Bring the milk to a boil in a saucepan and remove from heat. In another saucepan, melt the butter. Add the flour and sauté the mixture, stirring, for about 2 minutes. Gradually add the hot milk, and whisk everything together directly in the saucepan until well combined. Add the spices. Cook over high heat for a few minutes, stirring constantly. The milk mixture should thicken. Remove the saucepan from heat and beat in 4 egg yolks.
Step 2
In a separate bowl, whisk the egg whites with a pinch of salt until they form a thick foam. Gently fold the egg whites into the mixture and then add the grated Emmental cheese. Carefully transfer the soufflé into a 1.5-liter baking dish that has been greased with butter and sprinkled with a small amount of grated cheese. The dish should be filled with the soufflé to three-quarters of its capacity.
Step 3
Preheat the oven to 392°F. Place the souffle dish on the lower rack of the oven and bake for 20-30 minutes. Do not open the oven during the first 20 minutes to prevent the souffle from collapsing.
Step 4
As soon as the cheese soufflé develops a golden crust, it should be taken out and served immediately with warm French baguette.
