Description
If you can't find tahini, you can make it yourself. Toast sesame seeds until golden brown (be careful not to burn them), then grind them with regular vegetable oil in a blender. Hummus is often served with whole chickpeas and olive oil (the oil is a must).

- Chickpea - 3.5 oz
- Meyer Lemon Juice - 0 fl oz
- Olive Oil - 0 fl oz
- Black Cumin (Cumin) - 0.2 oz
- Smoked salt - 0.2 oz
- Tahini - 1.4 oz
Step by Step guide
Step 1
Soak the chickpeas in cold water overnight.
Step 2
The next day, in the same water, bring it to a gentle simmer over low heat for 2 hours, until tender.
Step 3
Drain the liquid, leaving 1 cup in reserve.
Step 4
Place the chickpeas in a blender, add extra virgin olive oil, and blend until smooth.
Step 5
Add tahini and lemon juice, gradually grinding until a smoother consistency is achieved (you can add liquid for a thinner consistency, to taste).
Step 6
Next, add paprika and cumin and stir gently once more.
