Ingredients
- Beets - 35.3 oz
- Water - 17 fl oz
- 9% Vinegar - 2 fl oz
- Sugar - 0.9 oz
- Salt - 1 teaspoon
- Black peppercorns - 5 pieces
- Cloves - 5 pieces
- Bay leaves - 2 pieces
Step by Step guide

Wash the beets, peel them, place them in a pot, cover with water, and boil until tender, about 1 to 1.5 hours.
Step 2
Remove the beets from the broth, let them cool slightly, and slice them (into strips, cubes, or grate them; small young beets can be left whole).
Step 3
Place the beets into clean jars.
Step 4
Prepare the marinade. In a pot, pour in the water, add salt, sugar, peppercorns, cloves, and bay leaves, pour in the vinegar, mix everything, and bring to a boil.
Step 5
Pour the boiling marinade over the beets so that it completely covers them, and cover the jars with lids.
Step 6
Once the marinade cools, store the jars with beets in the refrigerator. The beets will be ready in 8 to 12 hours. Store the pickled beets in the refrigerator.
