Description
A reliable recipe with no unnecessary steps: first, a vegetable sauté with porcini mushrooms is prepared in a saucepan, then white wine is added. As it evaporates, it leaves the risotto with a light aromatic hint, and only then is the rice added to the saucepan, where it cooks in mushroom broth until it reaches the perfect al dente texture. It's crucial at the very end not to make the fatal mistake of throwing a chunk of butter into the pot before removing the risotto from the heat. If you do, the butter will melt instead of emulsifying, and the rice will turn from creamy and firm into greasy and wet. To make the process easier, it's best to cut the butter into small cubes and chill it ahead of time — a chef at a popular American restaurant always keeps a bowl of prepped butter cubes in the fridge next to the stove.
Ingredients
- Shallot - 0.7 oz
- Dry White Wine - 1 fl oz
- Thyme - 0.1 oz
- Arborio rice - 3.5 oz
- Porcini Mushrooms - 3.5 oz
- Mushroom seasoning - 13 fl oz
- Butter - 1.8 oz
- Vegetable Oil - 0 fl oz
- Parmesan Cheese - 1.8 oz
- Truffle Oil - 0 fl oz
- Parsley - 0.2 oz
Step by Step guide
Step 1
Cut the white mushrooms into large pieces.
Step 2
Finely chop the shallot.
Step 3
In a large skillet, sauté the mushrooms in a mixture of butter and vegetable oil until the moisture evaporates and the mushrooms turn golden brown.
Step 4
Add shallots and thyme. To prevent the onions from burning, immediately pour in the white wine.
Step 5
When the wine has evaporated, add the rice and sauté lightly until it becomes translucent, then pour in the broth (if you don't have broth, use regular water).
Step 6
Cook for 15 minutes. The rice should be cooked to an al dente texture.
Step 7
Remove the cooked risotto and add a little more butter.
Step 8
Using a spatula, fold the butter in with upward motions until it emulsifies.
Step 9
Plate the risotto and drizzle with truffle oil.
Step 10
Sprinkle with chopped parsley and finely shaved Parmesan.
