Description
Classic Solyanka is a hearty and flavorful soup that combines various types of meats, pickles, olives, and a rich broth. Ingredients
- Bone-in Beef - 2 lbs
- Water - 4 qt
- Beef tongue - 5.3 oz
- Smoked Brisket - 5.3 oz
- Vienna Sausage - 5.3 oz
- Bay leaf - 1 piece
- Allspice berries - 3 pieces
- Onion - 2 heads
- Carrot - 1 piece
- Passata Tomato Sauce - 1.1 oz
- Pickled Cauliflower - 7.1 oz
- Cucumber Brine - 5 fl oz
- Olives stuffed with lemon - 3.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Vegetable Oil - 1 fl oz
- Lemon - 1 piece
- Herbs - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Cover the beef with water, bring to a boil, and skim off the foam.
Step 3
When the broth becomes clear, add a halved onion, coarsely chopped carrot, bay leaf, and whole peppercorns. Simmer the broth for about 2 hours.
Step 4
Finely chop the onion and pickles.
Step 5
Slice the olives into rings.
Step 6
Slice the beef tongue and brisket into strips. Cut the sausages into rings about 1 cm thick.
Step 7
Strain the broth through a sieve or cheesecloth and return it to the pot. Discard the vegetables and spices from the broth, and allow the meat to cool.
Step 8
Sauté the onion in vegetable oil until golden brown.
Step 9
Add the cucumbers and tomato paste to the onions and sauté for another 3 minutes.
Step 10
Add the sautéed vegetables, sliced tongue, brisket, and sausages to the pot with the broth.
Step 11
Remove the meat from the bone and cut it into small cubes. Add to the soup.
Step 12
Pour in the brine, season with salt and pepper. Bring the soup to a boil and cook for 5 minutes.
Step 13
One minute before the cooking time is up, add the olives and turn off the heat. Let the soup steep for at least half an hour.
Step 14
Garnish the solyanka with fresh herbs and a wedge of lemon.
