Classic Solyanka is a hearty and flavorful soup that combines various types of meats, pickles, olives, and a rich broth. Ingredients

  • Bone-in Beef - 2 lbs
  • Water - 4 qt
  • Beef tongue - 5.3 oz
  • Smoked Brisket - 5.3 oz
  • Vienna Sausage - 5.3 oz
  • Bay leaf - 1 piece
  • Allspice berries - 3 pieces
  • Onion - 2 heads
  • Carrot - 1 piece
  • Passata Tomato Sauce - 1.1 oz
  • Pickled Cauliflower - 7.1 oz
  • Cucumber Brine - 5 fl oz
  • Olives stuffed with lemon - 3.5 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Vegetable Oil - 1 fl oz
  • Lemon - 1 piece
  • Herbs - to taste

Prepare all the ingredients.

Cover the beef with water, bring to a boil, and skim off the foam.

When the broth becomes clear, add a halved onion, coarsely chopped carrot, bay leaf, and whole peppercorns. Simmer the broth for about 2 hours.

Finely chop the onion and pickles.

Slice the olives into rings.

Slice the beef tongue and brisket into strips. Cut the sausages into rings about 1 cm thick.

Strain the broth through a sieve or cheesecloth and return it to the pot. Discard the vegetables and spices from the broth, and allow the meat to cool.

Sauté the onion in vegetable oil until golden brown.
