Description
A traditional Scottish festive soup, the festivity of which lies not in the grand selection of ingredients or in a special presentation, but in the charming fruity-spicy spirit that showcases many culinary tricks.
Ingredients
- Poultry - 1 piece
- Leek - 6 stalks
- Chicken Broth - 2 qt
- Rice - 7.1 oz
- Pitted Wild Apricots - 7.1 oz
- Bay leaf - 1 piece
- Thyme - 4 sprigs
- Parsley - 6 sprigs
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the chicken into pieces.
Step 2
Sauté, pour in the broth, and add bay leaf, thyme, and parsley to the pot. Bring to a boil and simmer for half an hour, skimming off any foam.
Step 3
Then add the white parts of the leek, cut into 2-centimeter pieces. Cook everything together for another twenty minutes.
Step 4
Remove the pieces of chicken from the broth, replace them with prunes, and add rice. Season with salt and pepper. Cook for another twenty minutes.
Step 5
Remove the chicken meat from the bones, place it in the pot with the soup, and serve the soup by ladling it into bowls.
